We have made these at least five times since my sister sent me the recipe a little over a week ago. We double the recipe and manage to eat all of the pancakes in one day. I sub coconut milk for the milk, coconut oil for the oil/butter, use all whole wheat flour, and use 1 T flax/3 T water for the egg. They are so good! I haven't made the streusel topping and instead top them with homemade granola and applesauce. Mmm!

Egg rolls/sweet & sour sauce

I followed this recipe fairly closely. I added pea sprouts, shallots, and omitted the pork. I rubbed the egg roll wrappers with a bit of olive oil and baked at 400 degrees about 20 min. We served them over rice. I also made some sweet and sour sauce to put on top. I followed this recipe exactly but used arrowroot powder instead of cornstarch.

Chocolate Chip Cookies
I no longer buy eggs, so all of my recipes are egg-free. I adapted the chocolate chip cookie recipe on the back of the Trader Joe's chocolate chip bag:
2 1/4 c whole wheat flour
1 t baking soda
3/4 c sugar (any kind--brown, white, sucanat, etc. You can probably cut it down a bit more but not much)
1/2 c butter softened
1/2 c applesauce
1 t vanilla
2 T flax mixed into 6 T water and set aside to thicken
1 1/2 c chocolate chips
1 c crushed walnuts
Mix it all together and bake at 375 degrees for 10 min. This makes about 40 cookies for me.

Muffins
We eat a lot of muffins around here. I bake a couple dozen at a time, put them in the freezer and have snacks ready for on-the-go. I enjoy pumpkin muffins all year round and these ones from weelicious are my favorites. I add raisins, walnuts, and a scoop of oatmeal to them. I don't put an egg and sub 1T flax seed/3T water in place of it. I have also used whole milk yogurt in place of the milk.
Gingerbread cookies
We made these last week and ate the whole batch in five days. I didn't think they were great, but they were good enough to make again, so here's the recipe. I think I followed it exactly. We made a simple powdered sugar/milk frosting which wasn't necessary but Kinsley wanted to decorate cookies.
