Spinach Pesto

Spinach Pesto

  • 4 (?) c fresh spinach
  • 1 c (?) fresh basil
  • 2-4 T olive oil
  • 1/4 c pine nuts
  • 1 T lemon juice
  • 1/4 c grated parmesan cheese
  • 4 cloves garlic
  • 1/4 c water
  • 1 t (or more) salt
Put everything but the pine nuts in the blender and blend until a sauce-like consistency (add more water if needed). Heat through. Mix in toasted pine nuts. Serve over pasta.
